This is super-tasty. And with Fall coming on, squash — one of my most favorite foodages — is abundant. It’s technically fall fruit! This recipe is one I came up with several years ago as an alternative to using standard spaghetti. It’s great to have as just a meal, but it’s also terrific as a side dish to fish, chicken or red meat. If you’re into wine or beer, it goes well with all kinds.
Plus it’s also really easy to make, which is always a big plus in my book, because the last thing I really want to do when I get home from a long day is bandy about in my kitchen for several hours. I don’t mind a longer dish to prepare on the weekends, but during the week, it’s all about the ease. And the health, of course. It’s also got a fairly low carbohydrate count.
